Best meatballs ever

There is so much flavour in these meatballs. The sauce is gorgeous mopped up with a low carb roll. Forget pasta you don't miss it with a side of green beans and topped with Parmesan cheese.

Ingredients
  

Meatballs

  • 500 g mince beef the fattier the better
  • 450 g gluten free sausage meat or pork mince
  • 1 clove garlic crushed
  • 1 tbs chopped fresh parsley
  • salt and pepper

Tomato sauce

  • 750 g passata
  • 3 clove garlic crushed
  • 2 tbs olive oil
  • 1 tbs chopped fresh basil
  • salt and pepper

Instructions
 

Meatballs

  • Mix all the ingredients together in a bowl, divide and roll into meatballs about 4cm in diameter.
  • Pre heat a large frying pan to hot and fry the meatballs in batches, so that they are nicely browned all over but not cooked through. Do not wipe the fat out of the pan

Tomato Sauce

  • Turn the heat down to medium, add oil first then the passata, followed by the garlic, basil, salt and pepper, stir well.
  • Place all the meatballs in a single layer into the sauce. Simmer for approx 45 minutes, turning occasionally and making sure that the sauce does not catch. You can also get them to this stage and place in the oven to cook instead. Or cook low and slow in a slow cooker.
  • Serve with green beans and low carb rolls with garlic butter. Low carb roll recipe link below.
