Ranch eggs

Ranch eggs, or Huevos Rancheros, is a Mexican version of breakfast. Good at any time of the day, the fresh flavours of the salsa and guacamole (make it when you have leftovers from previous meals or follow recipe links below) are enhanced by the egg yolk. You can add all sorts to them; cheese, chorizo, refried beans, it's up to you.

Ingredients
  

  • 1 low carb pizza base see link below for recipe
  • 3 eggs the way you like them free range
  • cheddar
  • guacamole see link below for recipe
  • salsa see link below for recipe

Optional

  • fried halloumi slices
  • fresh chopped coriander to serve

Instructions
 

  • Pre heat the oven to 200℃.
  • Put the low carb pizza base and its baking paper onto a baking sheet.
  • Top with grated cheddar. Cook for 5 minutes until the cheddar melts.
  • Mean while cook the eggs.
  • Serve the base topped with eggs, salsa, guacamole and fresh coriander with a side of halloumi if you're extra hungry.
