Sunny Tomato dip

This could not be simpler to make. Passed to me by a family friend via my mum, I cannot take credit for it, but boy is it good for everyone keeping an eye on what they eat.

Servings 6 as a dip

Ingredients
  

  • 100 g tomato puree
  • 50 g walnuts
  • 1 clove garlic peeled
  • ΒΌ tsp dried oregano
  • extra virgin olive oil to make the right consistancy
  • salt to taste

Instructions
 

  • Put the tomato puree, garlic, salt and walnuts into a food processor. Add a little olive oil and blend. Add more oil to get the consistency you require.
  • That's it! Really nice served as a dinner party hors d'oeuvres with the savoury cheeses crackers. See recipe below.
