satay chicken skewers, peanut sauce and lime wedge

Satay Chicken

Quick and easy, this makes a good starter or light lunch.

Servings 4 as a starter

Ingredients
  

Marinade

  • 2 large chicken breasts Tofu, prawns, beef also work well
  • 2 tbs tamari wheat free soy
  • 2 tbs rice syrup
  • 1 lime juiced top tip, roll the lime before squeezing to get more juice
  • Few drops tabasco
  • 1 clove garlic crushed
  • 1 tsp ginger puree Alternatively 1/2 tsp ground ginger
  • 1 tbs light in colour olive oil

Peanut sauce

  • 1 clove garlic crushed
  • 1 tsp ground ginger
  • 4 tbs rice syrup
  • 1 tbs tamari
  • 1 tsp peri peri sauce sugar free chilli sauce
  • 5 tbs pure peanut butter no added sugar or oil
  • 1/2 lime juiced
  • 1 tsp onion granules
  • 1 tbs miso paste
  • 2 tbs boiling water

Instructions
 

  • Cut the chicken into 2 cm wide strips.
  • Put the marinade ingredients into a bowl, stir well and add the chicken. Stir again so that the chicken is well covered. Leave to marinate for 30 minutes or longer if you have time.
  • In a small bowl put all of the sauce ingredients except the boiling water. Stir well then stir in the boiling water to make a smooth and shiny sauce.
  • Pre heat the grill or BBQ. Thread the chicken onto skewers, and grill until well browned and cooked through.
