Satay Chicken
Quick and easy, this makes a good starter or light lunch.

Marinade
- 2 large chicken breasts Tofu, prawns, beef also work well
- 2 tbs tamari wheat free soy
- 2 tbs rice syrup
- 1 lime juiced top tip, roll the lime before squeezing to get more juice
- Few drops tabasco
- 1 clove garlic crushed
- 1 tsp ginger puree Alternatively 1/2 tsp ground ginger
- 1 tbs light in colour olive oil
Peanut sauce
- 1 clove garlic crushed
- 1 tsp ground ginger
- 4 tbs rice syrup
- 1 tbs tamari
- 1 tsp peri peri sauce sugar free chilli sauce
- 5 tbs pure peanut butter no added sugar or oil
- 1/2 lime juiced
- 1 tsp onion granules
- 1 tbs miso paste
- 2 tbs boiling water
Cut the chicken into 2 cm wide strips.
Put the marinade ingredients into a bowl, stir well and add the chicken. Stir again so that the chicken is well covered. Leave to marinate for 30 minutes or longer if you have time.
In a small bowl put all of the sauce ingredients except the boiling water. Stir well then stir in the boiling water to make a smooth and shiny sauce.
Pre heat the grill or BBQ. Thread the chicken onto skewers, and grill until well browned and cooked through.
