Coconut 'Condensed' Milk

Great with fruit, poured over gluten free pancakes, or on its own. Makes approx. 300g

Ingredients
  

  • 1 can organic full fat coconut milk
  • 130 g rice syrup

Instructions
 

  • Mix together in a small pan. Bring to the boil.
  • Simmer uncovered over a medium heat, stirring occasionally for 30 minutes until reduced by half.
  • Cool and store in an airtight jar the fridge for up to 2 weeks.
