Cod with chorizo and leeks
This is a classy looking dish with sophisticated flavours but really simple to make.

Ingredients
800
g
cod fillets
or any other white fish
3
leeks, halved and sliced
250
g
chorizo ring finely chopped
no added sugar
600
ml
double cream
salt and pepper
Topping
100
g
ground almonds
100
g
Parmesan finely grated
2
lemons - zest only
salt and pepper
olive oil for drizzling
Instructions
Boil a full kettle and preheat the oven to 200°fan, 220°electric or gas mark 7.
Put the sliced leeks in a bowl and pour on the boiling water and leave for 2 minutes.
Drain into a sieve and spread the leeks in a single layer in a large ovenproof dish.
Sprinkle over the chorizo.
Cut the fish into approx. 5cm pieces and arrange in a single layer over the chorizo. Season with salt and pepper.
Pour over the double cream evenly.
Topping
Mix all the ingredients together in a bowl and using a spoon sprinkle over the entire dish.
Drizzle the olive oil across the top and bake for 30 minutes until golden brown and bubbling.
