Smoky roasted cauliflower tacos

This food is for sharing. Make all the dishes and let people pile up their tacos in their own way!

Ingredients
  

Soft Tacos (made from mini low carb pizza bases)

  • 8 mini low carb pizza bases click on the link below

Cauliflower

  • 1 large head of cauliflower cut into small florets
  • 4 tbsp olive oil
  • 2 tbsp smoked paprika
  • 2 tsp ground cumin
  • 2 tsp garlic granules
  • 2 tsp onion granules
  • salt and pepper to taste

Avocado cream

  • 1 avocado or 150g frozen avocado defrosted
  • 1 lime juice only
  • 1 tbsp full fat creme fraiche
  • salt and pepper to taste

Optional corn to serve (high in carbs)

  • 1 corn cob cooked and grilled, kernels removed

To serve

  • sliced red onion
  • creme fraiche
  • salsa (recipe link below
  • grated cheese
  • chopped chillies
  • shredded lettuce

Instructions
 

  • Pre heat your oven to fan 200°c, electric 220°c or gas 7.
  • In a bowl, mix the spices and oil together and coat the cauliflower florets thoroughly.
  • Pour out into a single layer on a baking tray.
  • Bake for 20-25 minutes, turning once, until crisp and thoroughly cooked.
  • Meanwhile mash the avocado with the lime juice. Add the creme fraiche and season to taste.
  • Heat a dry frying pan until smoking hot and flash fry the tacos. Keep warm on a plate until ready to serve.
  • Serve with grated cheese, sliced red onion, salsa (recipe link below) and extra creme fraiche.
