Best ever easy low carb granola

So delicious and so much better for you than cereals. You don't have to serve this with milk, you could have it as an on the go snack.

Ingredients
  

  • 25 g coconut oil
  • 50 g erythritol, powdered is best
  • 100 g raw pumpkin seeds
  • 100 g raw sunflower seeds
  • 100 g raw flaked almonds
  • 30 g raw sesame seeds
  • 60 g raw coconut shavings, crushed
  • 1 tsp vanilla extract
  • 10 g coconut flour

Instructions
 

  • Pre heat the oven to 160°c fan, or 180°c conventional oven or Gas 4.
  • Put the coconut oil into a medium sized bowl, and melt in the microwave for approx. 50 seconds or until completely melted.
  • Add everything apart from the erythritol and coconut flour and stir to coat thoroughly with the oil.
  • Add the erythritol and coconut flour and stir to combine.
  • On a large baking tray with a lip, spread the nut/seed mixture into a fairly thin layer.
  • Bake for 10 minutes, take out and give the granola a stir.
  • Cook in 5 minute increments, stirring each time until you have a nice golden colour to the mixture.

  • Allow to cool fully before storing in an airtight container.

Notes

Serve with Jersey milk to get the most digestible nutrition possible.
