Low Carb Onion Bhaji

Traditionally these are made with gram flour, but to keep the carb content down I've used a different batter mix. Super easy to make and absolutely delicious. Serve as a starter for 4 or a main for 2.

Instructions

  1. 1

In a medium bowl place the cream cheese and give it a stir.

  2. 2

Beat in one egg at a time until fully incorporated.

  3. 3

Beat in the psyllium husk powder.

  4. 4

Add all the other batter ingredients and leave to stand for 10 minutes while the psyllium thickens.

  5. 5

Stir in the finely sliced onion.

  6. 6

Fill a frying pan about 2cm deep with oil and heat over a medium-high heat.

  7. 7

Add serving-spoon-sized scoops of the onion and batter mixture to the pan, about 4 at a time. Cook until golden brown on each side, approximately 7 minutes in total.

  8. 8

Drain on kitchen towel and keep warm until ready to serve with lemon wedges, mint yoghurt, and salad.

Notes

  • Use coconut yoghurt instead of cream cheese if dairy free.
  • If you only have curry powder in the cupboard, use 1 tbsp in place of the individual spices.
  • Great as a starter for 4 or a main for 2.
