
Cod with chorizo and leeks
This is a classy looking dish with sophisticated flavours but really simple to make.

Ingredients
- 800 g cod fillets or any other white fish
- 3 leeks, halved and sliced
- 250 g chorizo ring finely chopped no added sugar
- 600 ml double cream
- salt and pepper
Topping
- 100 g ground almonds
- 100 g Parmesan finely grated
- 2 lemons - zest only
- salt and pepper
- olive oil for drizzling
Instructions
- Boil a full kettle and preheat the oven to 200°fan, 220°electric or gas mark 7.
- Put the sliced leeks in a bowl and pour on the boiling water and leave for 2 minutes.
- Drain into a sieve and spread the leeks in a single layer in a large ovenproof dish.
- Sprinkle over the chorizo.
- Cut the fish into approx. 5cm pieces and arrange in a single layer over the chorizo. Season with salt and pepper.
- Pour over the double cream evenly.
Topping
- Mix all the ingredients together in a bowl and using a spoon sprinkle over the entire dish.
- Drizzle the olive oil across the top and bake for 30 minutes until golden brown and bubbling.
