Cod with chorizo and leeks

This is a classy looking dish with sophisticated flavours but really simple to make.

Cook Time 30 mins
Total Time 40 mins
Servings 6 people

Ingredients
  

  • 800 g cod fillets or any other white fish
  • 3 leeks, halved and sliced
  • 250 g chorizo ring finely chopped no added sugar
  • 600 ml double cream
  • salt and pepper

Topping

  • 100 g ground almonds
  • 100 g Parmesan finely grated
  • 2 lemons - zest only
  • salt and pepper
  • olive oil for drizzling

Instructions
 

  • Boil a full kettle and preheat the oven to 200°fan, 220°electric or gas mark 7.
  • Put the sliced leeks in a bowl and pour on the boiling water and leave for 2 minutes.
  • Drain into a sieve and spread the leeks in a single layer in a large ovenproof dish.
  • Sprinkle over the chorizo.
  • Cut the fish into approx. 5cm pieces and arrange in a single layer over the chorizo. Season with salt and pepper.
  • Pour over the double cream evenly.

Topping

  • Mix all the ingredients together in a bowl and using a spoon sprinkle over the entire dish.
  • Drizzle the olive oil across the top and bake for 30 minutes until golden brown and bubbling.
