
Energy bites
I've come up with these as a quick energy source that are stable at room temperature. You can make them double the size of the picture. 3 recipes, 3 different flavours. If you have a small grinder it would be useful, or employ your food processor, it needs to be finely chopped to stick together.

Ingredients
Almond
- 50 g ground almonds
- 30 g coconut flakes shredded would work, but not dessicated
- 30 g rice syrup
- 10 g coconut oil
Pecan
- 50 g pecans raw
- 30 g coconut flakes shredded would work, but not dessicated
- 30 g rice syrup
Coconut
- 40 g coconut flakes shredded would work, but not dessicated
- 30 g rice syrup
- 20 g dextrose
- 10 g coconut oil
Instructions
- Process/grind the nuts and coconut finely.
- Put into a small bowl and add the rice syrup and coconut oil (plus the dextrose if making the coconut ones).
- Microwave for 10 seconds and then mix thoroughly.
- Mold into balls with your hands, squeezing the mixture together so that it holds its shape.
- Put into cake cases or wraps of baking parchment. Allow to air dry a bit.
Notes
If you find the pecan or almond aren't sweet enough, add the 20g dextrose as in the coconut ones. Keep in an airtight container.
