
Sunny Tomato dip
This could not be simpler to make. Passed to me by a family friend via my mum, I cannot take credit for it, but boy is it good for everyone keeping an eye on what they eat. Just 3 ingredients that work brilliantly together.

Ingredients
- 1 jar sunkissed tomatoes have to be in olive oil, Waitrose do the best one
- 50 g walnuts
- 1 clove garlic peeled
Instructions
- Drain the tomatoes, but importantly, retain the oil.
- Put the tomatoes, garlic and walnuts into a food processor. Add a little of the tomato oil and blend. Add more oil to get the consistency you require.
- That's it! Really nice served as a dinner party hors d'oeuvres with the savoury cheeses crackers. See recipe below.
